Mealworm Recipe: Eggs Gone Fishing
This recipe was born out of a desire to make fisherman's eggs. It's basically the same idea, except this time the fish come packaged with the bait as well!
Ingredients (serves 1 hungry person or 2 not-so-hungry people)
- 1 can sardines, or 1/2 can of other fish (I used mackerel because it's what I had).
- 2 green onions, chopped
- 2 plum tomatoes, diced
- 3 cloves garlic
- 3 eggs
- salt & pepper to taste
- 2oz mealworms
- Take the worms out of the freezer.
- (optional) chop the worms into pieces so they're a little less wormy.
- Layer the fish, worms, onions, tomatoes, and garlic in a small dish, and bake at 450 for a few minutes.
- Add the eggs, salt, and pepper on top. Bake until the whites are set. As you can see, I overdid my eggs a little - whoops!
